In this recipe, I paired them with creamy coconut rice and a savory gravy, creating a dish that’s both comforting and full of depth. Ingredients:

For the Coconut Rice:

  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup water
  • 1 tsp salt

For the Pink Oyster Mushrooms:

  • 1 lb Pink Oyster mushrooms (fresh or grown from a Pink Oyster Mushroom Grow Kit)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

For the Gravy:

  • 1 cup vegetable stock
  • 1 tbsp flour or cornstarch (for thickening)
  • 1 small shallot, minced
  • 1 tbsp soy sauce
  • 2 tbsp butter or plant-based butter
  • Salt and pepper to taste

Instructions:

1. Cook the Coconut Rice:

  • In a medium pot, combine the jasmine rice, coconut milk, water, and salt.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 15-20 minutes until the rice is cooked and the liquid is absorbed.
  • Fluff the rice with a fork and set aside.

2. Sauté the Pink Oyster Mushrooms:

  • Clean and slice your Pink Oyster mushrooms. If you’re using homegrown mushrooms from a Pink Oyster Mushroom Grow Kit, be sure to harvest them fresh before cooking.
  • In a skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  • Add the mushrooms to the pan and sauté for 5-7 minutes, until they’re tender and slightly crispy on the edges. Season with salt and pepper to taste.

3. Make the Gravy:

  • In the same skillet, melt the butter over medium heat. Add the minced shallot and cook until soft.
  • Stir in the flour (or cornstarch) to form a roux, cooking for 1 minute.
  • Slowly whisk in the vegetable stock, allowing the gravy to thicken. Add soy sauce and adjust the seasoning with salt and pepper as needed.
  • Simmer for a few minutes until the gravy reaches your desired consistency.

4. Assemble the Dish:

  • Serve the coconut rice as a base on your plate.
