Ingredients:
For the Coconut Rice:
- 1 cup jasmine rice
- 1 can (13.5 oz) coconut milk
- 1 cup water
- 1 tsp salt
For the Pink Oyster Mushrooms:
- 1 lb Pink Oyster mushrooms (fresh or grown from a Pink Oyster Mushroom Grow Kit)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
For the Gravy:
- 1 cup vegetable stock
- 1 tbsp flour or cornstarch (for thickening)
- 1 small shallot, minced
- 1 tbsp soy sauce
- 2 tbsp butter or plant-based butter
- Salt and pepper to taste
Instructions:
1. Cook the Coconut Rice:
- In a medium pot, combine the jasmine rice, coconut milk, water, and salt.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and set aside.
2. Sauté the Pink Oyster Mushrooms:

3. Make the Gravy:
- In the same skillet, melt the butter over medium heat. Add the minced shallot and cook until soft.
