What You’ll Need to Make Lion's Mane Steak with Polenta and Red Wine Cream Sauce
Ingredients:
-
For the Lion's Mane Steak:
- 1 large Lion's Mane mushroom (grown using our Lion's Mane Grow Kit)
- Olive oil for cooking
- Salt and pepper to taste
-
For the Polenta:
- 1 cup polenta
- 4 cups vegetable broth
- 1/4 cup Parmesan cheese (optional for non-vegan)
- 2 tbsp butter or plant-based butter
- Salt to taste
-
For the Red Wine Cream Sauce:
- 1/2 cup red wine
- 1/2 cup heavy cream (or a plant-based alternative)
- 1 clove garlic, minced
- 1 small shallot, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
1. Prepare the Lion’s Mane Mushroom:
- Start by slicing your Lion’s Mane mushroom into thick steak-like pieces. This hearty mushroom has a texture that really holds up to searing, making it a perfect meat substitute.
- Heat olive oil in a skillet over medium heat, then sear the mushroom slices for about 3-4 minutes on each side until golden brown and crispy on the edges. Season with salt and pepper to taste.
2. Cook the Polenta:
- Bring the vegetable broth to a boil in a pot. Slowly add the polenta while whisking to prevent lumps.
- Reduce the heat and simmer for 20-25 minutes, stirring occasionally. Once cooked, stir in the butter and Parmesan cheese (if using) and season with salt.
3. Make the Red Wine Cream Sauce:
- In the same skillet where you cooked the mushrooms, add a little more olive oil. Sauté the minced garlic and shallot until soft and fragrant.
- Add the red wine and bring it to a simmer, allowing it to reduce by half.
- Stir in the cream and let it cook for a few more minutes until the sauce thickens. Season with salt and pepper.
4. Assemble the Dish:
- Plate a generous portion of polenta as the base.
- Place the seared Lion’s Mane steak on top.
- Drizzle the red wine cream sauce over the mushroom and polenta.
- Serve with your favorite greens or a side salad for a complete meal.
